Miso Granola & Apricots

For 4 portions
  • 1/4 cup vegetable oil
  • 1/4 cup maple syrup
  • 2 Tbsp miso
  • 1/2 cup coarsely chopped nuts
  • 1 1/2 cup rolled oats
  • 400ml yogurt
  • 8 apricots
  1. Preheat oven to 150° C. Combine oil, syrup, miso, nuts and oats in a bowl and mix well.
  2. Spread the mixture on a baking pan and press it down firmly with a spatula. Bake for 20-30 minutes, stirring halfway through. Granola is ready when golden brown.
  3. Let the granola cool down. It can be kept in an airtight container for about a month.
  4. Serve with yogurt and apricots.
